Raw Toffee Slender Protein Bars




  • 3 scoops Vanilla Ice Cream Slender Blend
  • 1 cup pecan nuts
  • 1 cup cashew nuts
  • 1 cup soft pitted dates
  • 3 tbsp cacao nibs
  • 3tbsp cocoa powder
  • ½ cup coconut oil
  • ½ cup cacao butter
  • ½ cup almond milk
  • Pinch of salt x 2
Looking for a yummy, nutritious treat? These raw toffee protein bars are made with cacao nibs which are rich with antioxidants to help reduce inflammation in the body - plus chocolate also boosts your happiness hormone - serotonin!


Soak pecans and cashews over night
    Toffee layer 
    • Blend pecans, cacao nibs and a pinch of salt at low speed
    • Add dates to blender and pulse at low speed– keeping mixture a little chunky
    Chocolate Layer
    • Gently melt coconut oil and and raw cacao butter and add to blender with soaked cashew nuts, honey, pinch salt, vanilla slender blend and almond milk – blend on high speed until smooth
    • Pour 1/3 of the dough into a baking tray and place into a freezer for 15 minutes to set
    • Remove from the freezer and spread the toffee pecan layer across the base
    • To the remaining mixture add 3 tbsp cocoa powder and pulse through
    • Place some pecan nuts on the top for decoration (optional)
    • Spoon mixture on to the top of the other layers and place in the freezer to set for a further 1-2 hours
