Chilli!

Ingredients

  • 1 tsp coconut oil
  • 500g organic minced beef
  • 1/2 can chopped tomatoes
  • 1 medium onion - sliced
  • 1 chopped red pepper
  • 1 can of kidney beans
  • 2 tsp chilli powder
  • 2 cloves garlic - chopped finely
  • 2 tsp cumin

Method

  • 1. Heat a tsp of coconut oil in a pan and fry the onions for 5 minutes until softened
  • Add the red pepper, garlic, chilli powder and cumin and fry for a further 5 minutes
  • Then add in the minced beef and brown the meat - make sure it sizzles not stews
  • Once the beef is nicely browned then add the chopped tomatoes and kidney beans and simmer for a further 15 minutes stirring occasionally - add a little water if it becomes too dry
  • Serve with sliced avocado and a spoonful of yoghurt
  • Makes 4
